  3. Sauté the onions, garlic, prawn heads and shells in a pot over medium heat until the bottom of the pot starts to caramelize.
  4. Turn up the heat and deglaze the pot by adding the water.
  5. Reduce the heat and scrape off all the bits stuck to the bottom. Add the bay leaf, then let it simmer for around 1 hour.
  6. Season with salt, then use a masher to press the soup mix to extract all the flavours, and the stock is ready.
